Easy Peanut Chickpeas
1 can chickpeas
1 can lite coconut milk
3/4 cup frozen peas
1 package Thai peanut sauce
(or make your own, like I do)

Mix peanut sauce package with coconut milk in a medium saucepan, bringing to a boil over medium heat. Add drained chickpeas and cook on medium-low heat for ten minutes. Add the frozen peas with three minutes left to go. Serve over rice.
